Description
A classic lemon tart recipe featuring a buttery crust and silky smooth lemon filling. Perfectly balanced between sweet and tangy.
Ingredients
1 1/4 cups flour
1/2 cup cold butter (cubed)
2/3 cup sugar
4 large egg yolks
1/2 cup fresh lemon juice
1 tbsp lemon zest
2 tbsp heavy cream (optional)
Pinch of salt
Instructions
1. Mix flour, sugar, salt, and cold butter until crumbly.
2. Add egg yolk; mix until dough holds.
3. Press dough into tart pan. Chill 30 mins.
4. Blind bake at 375°F for 15 mins, remove weights, bake 10 more mins.
5. Cook sugar, yolks, lemon juice, and zest until thickened.
6. Stir in butter (and cream if using).
7. Pour filling into crust. Bake at 325°F for 10-12 mins until just set.
8. Cool 1 hour, then refrigerate 2-3 hours before serving.
Notes
Use fresh lemons for the best flavor.
Add berries for a beautiful garnish.
Coconut cream works great if dairy-free.
