This fluffy cottage cheese cloud bread is light, protein-rich, and perfect for low-carb meals. With just a few ingredients, it’s easy to make and incredibly versatile for both sweet and savory uses.
Ingredients
3 eggs
½ cup full-fat cottage cheese
¼ tsp cream of tartar
Pinch of salt
Optional: garlic powder, herbs for flavor
Instructions
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate egg whites and yolks while the eggs are still cold.
Whip egg whites with cream of tartar until stiff peaks form.
In a separate bowl, mix egg yolks, cottage cheese, and salt until smooth.
Gently fold the whipped egg whites into the yolk mixture without deflating.
Scoop the mixture into round mounds on the baking sheet.
Bake for 25–30 minutes until golden and firm.
Let cool completely before removing from the tray.
Notes
Use room temperature egg whites for better volume.
Store in the refrigerator for up to 3 days or freeze for up to 1 month.
