Description
Lazy yet hearty crockpot dinner that’s rich in flavor and takes minimal effort.
Ingredients
2 lbs boneless chicken thighs
1 cup salsa
1 packet taco seasoning
1 cup canned corn
1/2 cup chopped onion
Salt to taste
Instructions
1. Place chicken in crockpot.
2. Add salsa, taco seasoning, corn, and onions.
3. Stir to combine.
4. Cook on low for 6-7 hours.
5. Shred chicken and mix.
6. Serve with rice or in tacos.
Notes
Can substitute chicken for pork.
Freeze leftovers for up to 2 months.
