Description
These easy chicken foil packets are loaded with juicy chicken, tender vegetables, and flavorful seasoning — perfect for oven or grill.
Ingredients
2 boneless skinless chicken breasts
1 cup red potatoes, thinly sliced
1 zucchini, sliced
1 bell pepper, chopped
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Foil sheets for wrapping
Instructions
1. Preheat oven to 400°F or preheat grill to medium-high heat.
2. Cut foil into large squares and grease lightly with oil.
3. Place chicken breast in the center of each foil.
4. Add sliced veggies on top and around the chicken.
5. Drizzle with olive oil and sprinkle seasonings evenly.
6. Fold foil to seal packets tightly.
7. Bake for 25–30 minutes or grill for 20–25 minutes, flipping once.
8. Check that chicken reaches 165°F internally.
9. Carefully open packets and serve hot.
Notes
You can swap in sweet potatoes, green beans, or mushrooms.
For extra flavor, add BBQ sauce, teriyaki, or lemon slices.
Double the foil layer for grilling or campfire cooking.
