Description
This rustic-style canned chicken keto casserole is creamy, cheesy, and comforting. It’s perfect for weeknight dinners or a cozy meal prep option.
Ingredients
1 (12.5 oz) can chicken breast, drained and flaked
1/4 cup sour cream
1/2 cup full-fat cream cheese, softened
1 1/2 cups shredded mozzarella cheese
1/2 tsp onion powder
1/4 tsp dried thyme
Salt and pepper to taste
1 tbsp chopped fresh parsley (optional)
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, mix canned chicken, sour cream, cream cheese, and onion powder.
Add half the shredded mozzarella, thyme, salt, and pepper. Mix well.
Transfer to a greased small casserole dish and spread evenly.
Top with the remaining mozzarella cheese.
Bake for 20–22 minutes or until the top is golden and bubbly.
Sprinkle with fresh parsley before serving if desired.
Notes
For added texture, stir in cooked riced cauliflower or sautéed mushrooms.
Leftovers reheat well and taste even better the next day.
