Description

This rustic-style canned chicken keto casserole is creamy, cheesy, and comforting. It’s perfect for weeknight dinners or a cozy meal prep option.


Ingredients

Scale
  • 1 (12.5 oz) can chicken breast, drained and flaked

  • 1/4 cup sour cream

  • 1/2 cup full-fat cream cheese, softened

  • 1 1/2 cups shredded mozzarella cheese

  • 1/2 tsp onion powder

  • 1/4 tsp dried thyme

  • Salt and pepper to taste

  • 1 tbsp chopped fresh parsley (optional)


Instructions

  • Preheat oven to 375°F (190°C).

  • In a large bowl, mix canned chicken, sour cream, cream cheese, and onion powder.

  • Add half the shredded mozzarella, thyme, salt, and pepper. Mix well.

  • Transfer to a greased small casserole dish and spread evenly.

  • Top with the remaining mozzarella cheese.

  • Bake for 20–22 minutes or until the top is golden and bubbly.

 

  • Sprinkle with fresh parsley before serving if desired.

Notes

  • For added texture, stir in cooked riced cauliflower or sautéed mushrooms.

 

  • Leftovers reheat well and taste even better the next day.
