Description

A copycat recipe inspired by the Cracker Barrel campfire shrimp skillet, made with shrimp, corn, potatoes, peppers, and smoky seasoning cooked in a skillet or foil packets.


Ingredients

1 lb fresh shrimp, peeled and deveined

2 ears corn on the cob, cut into halves

1 lb baby red potatoes, quartered

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small onion, sliced

3 tbsp olive oil

2 tbsp brown sugar

1 tbsp smoked paprika

2 cloves garlic, minced

Salt and pepper to taste


Instructions

1. Preheat oven or grill to 400°F.

2. Toss shrimp, potatoes, corn, peppers, and onion with olive oil, brown sugar, paprika, garlic, salt, and pepper.

3. Arrange potatoes first in skillet or foil packets since they need more cooking time.

4. Add shrimp and vegetables on top and cover.

5. Cook for 20–25 minutes until shrimp are pink and vegetables are tender.

6. Serve hot in a skillet for authentic presentation.

Notes

For extra flavor, squeeze fresh lemon juice over the skillet just before serving.
