Description
These baked boneless chicken thighs are juicy, flavorful, and perfect for quick weeknight dinners or meal prep.
Ingredients
1 ½ lbs boneless skinless chicken thighs
1 ½ tsp smoked paprika
1 ¼ tsp garlic powder
1 tsp black pepper
½ tsp onion powder
½ tsp cayenne (optional)
1 ¼ tsp white sugar
½ tsp salt
2 tbsp olive oil
Instructions
1. Preheat oven to 400°F. Line a sheet pan with parchment paper.
2. Mix spices in a small bowl.
3. Pat chicken thighs dry with paper towel.
4. Rub olive oil and spice mix all over the chicken.
5. Place thighs in single layer on baking sheet.
6. Bake uncovered for 25–30 minutes until internal temp hits 165°F.
7. (Optional) Broil for 2–3 minutes for crisp top.
8. Rest 5 minutes before serving.
Notes
Letting the chicken rest before slicing locks in moisture.
Cut cayenne by half for milder heat.
